Marbling is the fat which is present within meat . The more marbling that exists within the meat, the higher the quality and the higher the grade given to the meat, such as Prime or Choice.

Suggested internal temperatures for meat are:
145 _ F = medium rare; 160 _ F = medium; and 170 _ F = well done.
